Cold cuts, one of the traditional street delicacies of Izmir, and cold cuts made from the brain, tongue and cheek parts of a lamb’s head, are finely chopped and blended with fresh greens and onions after adding spices. It is served by wrapping the brain, tongue and cheek between lavash.
